INGREDIENTS

  • 1 can black beans, drained and rinsed
  • 1 cup cooked brown rice
  • 1 onion, minced
  • 2 cloves garlic, minced
  • 1 tbsp FlavorGod Taco Tuesday Seasoning
  • 1 cup tomato sauce
  • 1/2 cup vegetable broth
  • 2 zucchini, sliced lengthwise and scooped (save the zucchini insides to add to the taco mixture)
  • 1/2 cup cheddar shreds
  • Fresh cilantro
  • Olive oil for sautéing

INSTRUCTIONS

  1. 1 Preheat the oven to 375 degrees.
  2. 2 Slice the zucchini lengthwise and scoop out the insides. Drizzle with olive oil, salt, and pepper. Place the zucchini halves face down on a parchment paper-lined baking sheet and bake for 10 minutes.
  3. 3 In a medium sauté pan, add olive oil, garlic, and onions. Sauté for 3-5 minutes. Then, add black beans, rice, tomato sauce, broth, and FlavorGod Taco Tuesday Seasoning. Simmer for 5-7 minutes and remove from heat.
  4. 4 Remove the zucchini from the oven and fill each half with the black bean rice mixture. Top with cheddar shreds and return to the oven for 15 minutes.
  5. 5 Remove from the oven and garnish with fresh cilantro. Enjoy!
