- 2 eggplants, peeled and sliced lengthwise
- 1 cup cashew or almond ricotta
- 2 cups mozzarella style shreds
- 1 jar marinara sauce
- 1 tsp FlavorGod Italian Zest

- Salt and pepper, to taste
- Olive oil

INSTRUCTIONS
- 1 Peel and slice the eggplant lengthwise
- 2 Season the eggplant slices with salt and let sit for 10 minutes. Dry with a paper towel and drizzle with olive oil, salt, and pepper, and toast in the oven for 15 minutes. Remove and let cool
- 3 In a cast iron or casserole dish, layer 1 cup of marinara, eggplant slices, ricotta, FlavorGod Italian Zest, and mozzarella shreds. Repeat the layering process, then top with remaining marinara, cheese, breadcrumbs, and FlavorGod Garlic Lovers seasoning
- 4 Bake for 45 minutes or until eggplant is tender. Top with fresh herbs and serve.
