Ingredients
- 1 cup orzo pasta
- 3 medium boneless, skinless chicken breasts, cut into bite-size pieces
- 3 medium carrots, peeled and cut into 1/4 inch rounds
- 1 medium onion, chopped
- 2 cloves garlic, finely chopped
- 1 cup sautéed mushrooms
- 1 celery stalk, chopped
- 5 cups vegetable broth
- 1 tsp chicken and waffles seasoning
- 2 bay leaves

- 1 tbsp olive oil

INSTRUCTIONS
- 1 Heat a medium-sized skillet over medium-high heat
- 2 Add 1 tablespoon of olive oil
- 3 Trim your carrots, onion, and celery stalk and chop them into bite-size pieces
- 4 Sauté them in the skillet for 5-7 minutes, stirring occasionally
- 5 Cut the chicken breast into bite-size pieces and add it to the skillet. Sauté for another 5-7 minutes or until the chicken is cooked through
- 6 Add garlic and cook for 1-2 more minutes
- 7 Add vegetable broth, chicken and waffles seasoning, bay leaves, and salt and peppercorn
- 8 Bring the soup to a boil. Reduce heat and add in orzo pasta
- 9 Cook for about 12 minutes
- 10 Add sautéed mushrooms and fresh parsley.
