Ingredients
- 1 medium eggplant, peeled and cubed
- 1 can of chickpeas, drained and reserve the liquid
- 1/2 onion, finely chopped
- 1 tablespoon FlavorGod Italian Zest seasoning
- 2 cloves garlic, minced
- 1 tablespoon marinara
- 1 teaspoon Worcester
- 1/4 cup nutritional yeast
- 1 1/2 cups panko breadcrumbs
- 1/4 cup oat milk
- 1 jar marinara
- Olive oil, salt, and pepper to taste

INSTRUCTIONS
- 1 Peel and cube your eggplant. Drizzle with olive oil and salt. Roast at 375 degrees for 15 minutes. Set aside to cool
- 2 In a food processor, add drained chickpeas, roasted eggplant, garlic, and Worcestershire sauce. Pulse until blended
- 3 In a large bowl, mix your panko breadcrumbs with oat milk and set aside
- 4 Add eggplant mixture into your bowl with breadcrumbs and add in minced onion, nutritional yeast, marinara, and FlavorGod Italian Zest seasoning
- 5 Start forming small balls out of your meatball mix and add to parchment paper-lined sheet pan. Cook meatballs for 20 minutes
- 6 Add your jar of marinara to a medium sauté pan and add your meatballs. Top with fresh parsley and basil and enjoy!
