INGREDIENTS

  • 4 Slices Bacon
  • 2 Tablespoon Butter
  • 2 Chicken Breasts
  • 1 Cup Onions, Chopped
  • 4 Slices Sourdough Bread
  • 4 Cheese Slices
  • 4 Dill Pickles, Sliced
  • 1 Tablespoon Umami Spice
  • 1 Cup Baby Spinach
  • 1 Teaspoon FlavorGod Cajun Seasoning
  • Thousand Island Sauce (or preferred sauce)

INSTRUCTIONS

  1. 1 In a skillet over medium heat, fry bacon until crispy. Remove and set aside on paper towels to drain excess oil.
  2. 2 In the same skillet, add 1 tablespoon of butter. Cook chicken breasts until golden brown and cooked through. Sprinkle Umami Spice on both sides while cooking. Once cooked, remove from skillet and shred the chicken using two forks.
  3. 3 In the same skillet, add remaining butter and sauté chopped onions until translucent and slightly caramelized. Add the shredded chicken back to the skillet and sprinkle with FlavorGod Cajun Seasoning. Stir well to combine and keep warm.
  4. 4 Cut sourdough bread into two slices. Preheat a waffle maker and lightly butter the inside. Place one slice of sourdough in the waffle maker.
  5. 5 Layer the prepared chicken mixture on top of the sourdough slice in the waffle maker. Add two slices of cheese, followed by a sprinkle of mozzarella cheese, baby spinach leaves, sliced dill pickles, and crispy bacon.
  6. 6 Drizzle Thousand Island sauce (or preferred sauce) over the ingredients. Place the remaining two slices of cheese on top. Close the waffle maker and cook until the cheese is melted, and the bread is golden and crisp.
  7. 7 Carefully remove the sandwich from the waffle maker and place the other slice of sourdough bread on top. Slice the sandwich in half and serve immediately.
