INGREDIENTS

  • 1 large or 2 small zucchini, sliced into thin discs
  • 1/2 onion, finely chopped
  • 4 cloves garlic, minced
  • 1 cup packed basil or Thai basil
  • 1 cup plant-based mozzarella shreds
  • 1/4 cup oat milk
  • 1/2 cup reserved pasta water
  • 1 tbsp FlavorGod Garlic Lovers Seasoning
  • Juice of 1 lemon
  • 1 box chickpea or red lentil spaghetti

INSTRUCTIONS

  1. 1 Slice zucchini into thin discs
  2. 2 In a sauté pan, lightly brown zucchini on both sides. Remove from pan
  3. 3 Make cream sauce by combining oat milk, lemon juice, Thai basil, mozzarella shreds, and FlavorGod garlic lovers seasoning. Add reserved pasta water to combine
  4. 4 Add onions and garlic to the same pan and sauté for 3 minutes. Add cheezy cream sauce and let the cheese melt
  5. 5 Add pasta and zucchini to the sauce and combine well
  6. 6 Top with fresh basil and FlavorGod cheese seasoning
