- 1 Large Chicken Breast

- 2 Cups Quinoa
- 4 Cups Water or Broth

INSTRUCTIONS
- 1 Place the chicken breast on a cutting board and flatten the thicker parts using a meat mallet or the bottom of a heavy pan.
- 2 Season one side of the chicken breast heavily with FlavorGod Hot Wings seasoning and lightly with FlavorGod Himalayan Salt & Pink Peppercorn.
- 3 Heat avocado oil in a skillet over low flame.
- 4 Cook the lightly seasoned side of the chicken breast for 3 minutes with the lid on.
- 5 Flip the chicken breast and cook the heavily seasoned side for another 3 minutes with the lid on.
- 6 In a medium-sized pot, bring 4 cups of water or broth to a boil.
- 7 Add 2 cups of quinoa to the boiling water or broth.
- 8 Reduce the heat to low, cover, and simmer for 20 minutes or until the liquid is absorbed and the quinoa is fluffy.
- 9 Fluff the cooked quinoa with a fork and transfer it to a large serving bowl.
- 10 Add chopped fresh parsley, diced tomatoes, lemon zest, lemon juice, and a sprinkle of FlavorGod Hot Wings seasoning to the quinoa.
- 11 Drizzle extra virgin olive oil over the quinoa mixture and toss gently to combine.
- 12 Place a cooked chicken breast on top of the quinoa salad.
- 13 Optionally, crumble feta cheese over the bowl for added flavor.
