My Honey BBQ rub begins with a savory and aromatic progression followed by the sweetness of honey while finishing with herbs and mild spices.

INSTRUCTIONS
- 1 In a large mixing bowl, combine the Boudin Sausage (removed from its casing), softened Cream Cheese, Pimento Cheese, diced Jalapeños, Mild Hot Sauce, Steak & Grill Spice, and FlavorGod Honey BBQ Rub. Mix thoroughly using a spoon or your hands until all ingredients are fully incorporated. The mixture should be creamy with visible bits of sausage, cheese, and jalapeños.
- 2 Boil the Barilla Manicotti Shells in a large pot of salted water, following the package instructions until they are al dente (firm, not mushy). Drain them and let them cool slightly so they can be easily handled.
- 3 Using a spoon or piping bag, carefully stuff each manicotti shell with the prepared filling. Be sure to stuff them as evenly as possible, filling them all the way to the ends.
- 4 Take each stuffed manicotti shell and wrap it with a slice of bacon. Overlap the ends of the bacon slightly and use toothpicks to secure the bacon if needed. Once wrapped, place the shells on a large tray or baking dish.
- 5 Sprinkle the wrapped shells with an additional dusting of Steak & Grill Spice and FlavorGod Honey BBQ Rub to enhance the flavor of the bacon and seasoning.
- 6 Cover the tray with plastic wrap and refrigerate the prepared shotgun shells for at least 4 hours, but preferably 12-20 hours. The longer they chill, the more the flavors meld together.
- 7 Preheat your smoker or oven to 250°F (120°C).
- 8 For Smoking: Place the stuffed shells on the smoker rack and smoke them for 60-90 minutes, or until the bacon is crispy and the filling is heated through.
- 9 For Baking: If you’re using an oven, bake the shells at 350°F (175°C) for 60-90 minutes. Keep an eye on them towards the end to ensure the bacon crisps up without burning.
- 10 Once the shells are cooked, remove them from the heat and allow them to cool for a few minutes. Drizzle with a bit of extra Hot Sauce for an additional layer of spice and flavor. Garnish with FlavorGod Sesame Seeds for a crunchy texture and extra flavor.
- 11 Arrange the Wild Game Shotgun Shells on a platter and serve immediately while hot. These make a great appetizer, party food, or even a fun main dish. Enjoy!
