INGREDIENTS

  • 1 package jackfruit (shaved or pulled)
  • 1 tbsp Flavor God Cajun Lovers Seasoning
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Sea salt & black pepper to taste
  • For the Cheese Sauce:
  • 2 tbsp plant-based butter
  • 1 can full-fat unsweetened coconut milk
  • 1 cup vegan cheese, shredded (e.g., Follow Your Heart or Daiya)
  • 1–2 tbsp nutritional yeast
  • Dash of the same seasonings used for the jackfruit (Cajun, garlic, onion, paprika, etc.)

INSTRUCTIONS

  1. 1 Cook the Jackfruit:
  2. 2 Sear chopped jackfruit in a skillet over medium heat until browned. Season with Flavor God Cajun Lovers, paprika, garlic powder, onion powder, salt, and pepper. Set aside.
  3. 3 Make the Cheese Sauce:
  4. 4 In a saucepan, melt plant butter and stir in coconut milk. Add in shredded vegan cheeses and whisk until smooth. Season with nutritional yeast and a sprinkle of the same spices used on the jackfruit.
  5. 5 Combine with Pasta:
  6. 6 Stir in cooked elbow pasta until fully coated in the cheese sauce. Then fold in the cooked jackfruit.
  7. 7 Bake It:
  8. 8 Transfer the mac to a cast iron skillet or baking dish. Top with extra vegan cheese and bake at 350°F until bubbly and golden on top (about 15–20 minutes).
  9. 9 Finish & Serve:
  10. 10 Drizzle with Cajun chipotle sauce (optional but highly recommended) and serve hot.
