INGREDIENTS

  • 1 can black beans, drained and rinsed
  • 1 cup plant-based cheddar cheese
  • 1 tbsp FlavorGod Jamaican Jerk seasoning
  • 6 corn tortillas
  • 1 large onion, chopped
  • 1 bunch cilantro, chopped

INSTRUCTIONS

  1. 1 Preheat the oven to 400 degrees.
  2. 2 In a sauté pan over medium heat, drizzle olive oil and add half of the chopped onions. Sauté for 2 minutes, then add the black beans and cook for another 3-5 minutes.
  3. 3 Add the FlavorGod Jamaican Jerk seasoning to the pan, mix well, and remove from heat.
  4. 4 In a small bowl, mix the cilantro and remaining chopped onions.
  5. 5 Place the tortillas on a baking tray lined with parchment paper. Drizzle olive oil over the tortillas. Spoon the black bean mixture, cheddar cheese shreds, and raw onions and cilantro onto each tortilla.
  6. 6 Fold over the tortillas and secure with a toothpick if needed. Bake for 12-15 minutes.
  7. 7 Garnish with the remaining cilantro-onion mix and enjoy!
